Lunch suggestions for 15 month old

I'm stuck for a variety of lunch ideas for dd2. We have nursery run most days right before lunch so it needs to be pretty quick to make. I am a fan of soup but not so much in the summer. I am struggling for ideas other than sandwhiches/crackers really or even variety of fillings. We have pasta for dinner usually twice a week on average so usually rule that out as a lunch option.

Currently our normal lunches are, tuna and sweetcorn wrap/sandwhich, scrambled egg, cheese on toast, mackerel on toast, crackers with cream cheese, beans on toast. We do hummous and breadsticks sometimes also but dd will not eat cucumber or veg dipped in any more juat ends up on the floor. I know that looks lile good variety but it seems like we have been eating that forever now, and some of those are reapeated more than others.

My dd is 14 months

Her quick dinners are things like you described

Plus potatoes and different veg with a bit of cheese grated on I find this quite quick

She's not much of a meat eater, tends to just throw it on the floor

She also has things like cous cous At nursery and really enjoys this

She is a very good veg eater so I do give a lot of veg

Dd used to like a "bits" lunch which was basically little amounts of whatever we had in, so small breadsticks, chunk of cheese, dried apricot, bits of raw veg etc.

Another thing she loved at this age was a veggie burger, you can make in batches and freeze. Have you thought of trying her with savoury muffins?This pizza recipeis a quickish one that might be worth trying Smile

pancakes with mushrooms, cheese, cream cheese, ham etc. make the batter in advance?

baked potatoes in microwave?

egg & veg fried rice.

I love my ideas so much I might use them myself :)
