lovely beetroot... what to do with it for 6mo?

My 6mo is on week three of weaning and enjoying lots of fruit and veg purees. I've just bought a lovely bunch of organic beetroot from the market, but realised I'm a bit stumped as to what to do with it now...

Should I steam it or bake it? Once I've cooked it what are good combinations - maybe mix with sweet potato, or chicken? Or red lentils maybe??

Bet you lot have got some super ideas...

You mean that beetroot doesn't grow in jars of vinegar?

it makes a super mess is my best advice
I did it with apricots and sweet potato
WE used cloth nappies and it ruined them
so we left beetroot out for another 2 yrs

oh yes the nappies afterwards are horrendous. I would only give a little bit...

and you boil it without cutting it, strip off leaves, boil in full pot of water for 30-45 mins depending on size... then plunge into cold water when cool skins will slip off easily

I used to puree it and use it as a pasta sauce! ds1 loved it when he first got on to finger foods.

Also used to blend it with tofu, then make little tarts with it.

Oh god, I hadn't considered the aftermath in the nappy department... Oh well, we are on disposables at the mo, so I think I'll cook up a couple for LO, and DH and I can eat the rest - perhaps a whole bunch was a bit overenthusiastic!

it makes a delicious soup. grate one of them (still raw) and keep it back. once you've made your soup (no onion, just combine with a veggie stock of your choice, simmer for a bit then whizz it up)and served it you put a blob of creme fraiche in the middle of the bowl and a dab of the grated raw beetroot.
of course, that's a soup for adults but i take it you could do something similar for a baby, especially if you do a home-made salt-free stock and maybe offer it with some bread. mmmm, i love beetroot. enjoy your meal.
