Scrambled egg with some grated cheese mixed in is a favourite here. Or don't scramble and make it into a cheesy omelette cut into strips.

I sometimes mix in some chopped spinach to make green eggs (looks vile tbh, but ds2 loves it).

Eggy bread (French toast)
Hummus sandwich or on toast
Fish - Plain fish, easy to cook from frozen.
Cheese on toast

Quinoa is very high in protein. I always cook with quinoa, almost every day, in omelettes mixed with vegetables (tortillas) or quiches, and like a rice pudding. It has almost no taste so it is easy to mix and eat!

Amaranth is another good grain - very high in protein. It's quite gloopy so it's better if you mix it into a sauce rather than it being a separate blob on the plate (like pasta)!

These cheese and lentil wedges are yummy and easy to make (I never bother with the breadcrumbs).

Baked beans with cheesy mash! Fat and protein packed and you can drain off some of the sauce if you're worried about sugar/salt content.
