Rice Pudding - teeny weeny portion!

Hoping someone may have a recipe for an individual portion of rice pudding for my 8 month old!

Preferably quicker than the traditional method of making it too Smile !

Actually I don't think there is a short cut. Other than a tin of Ambrosia.

buy flaked rice, you can make rice pudding in about 10 minutes or so and it's lovely

I spent ages making a huuuuge rice pudding using an Annabel Karmel recipe only for DD to turn her nose up at it every time I offered it to her.
That put me off trying DCs 2&3 on it!

But flaked rice is surely small and well, erm, flakey?

It's the texture I love... You need a nice chunky rice, imho.

Make rice pudding. Eat most of it yourself, saving a little to offer DC. Eat most of that too, after they rudely refuse the delicious dish you've slaved over.

That's why I don't want to make a huge portion - just incase my little tinker does the same!

There is nothing like a tin of ambrosia mary,but already bought a pack of pudding rice! May get a tin for me tho! Grin

As others have said, don't know if there's a quicker way but I've just made a small portion for my DS using

125ml milk/cream
13g pudding rice
a few drops of vanilla extract

although I did have a few small spoonfuls towards the end!

I used a ramekin to cook it but it still took about and hour and a half!

I give mine Rachel's organic rice pudding and they LOVE it. They have it a couple of times a week. There is sugar in it though.
