What to cook 6mo with a chicken leg?

Have a huge chicken leg to use up what should I do for 6mo? He is preferring purees. I have lots of veg (leeks, courgettes, cauliflower, red onions, carrots, new potatoes, peppers, sweetcorn, peas) and some fruits too (pear, apple, dried apricots, dried prunes). I have leftover chicken stock also. Would like to try him with a recipe I can use rice in.

Do you have a slow cooker? I have done slow cooked chicken leg with leeks, mushrooms and losalt chicken stock before, meat then just falls apart so very little mashing needed. If not just put in oven for a couple of hours on a low temp.
I'd cook the rice seperately and stir it in - overcook it so its easy to eat.
