YUMMY, just made 30 DINNERS for DS

just made 30 meals for ds 6 portions of 5 different meals thought i would share them with you all
Veg and brown rice

1 small bulb fennel, sliced
half can sweetcorn(no sugar no salt)
2 parsnips, chopped
Handfull brown rice
Saute fennel, then add all other stuff, cover with water and simmer untill rice is cooked about 15/20 mins, then blend to right consistancy
Also nice with chicken just brown with fennel

Cheesey Lentils

1/4 onion, chopped
2 carrots chopped
2 handfulls red lentis
1 handfull cheddar, grated

Saute onion and carrot add lentils cover with water, simmer for about 20 mins untill lentils ate soft and mushy then add cheese mash or blend

3 Veg and cheese

2 carrots chopped
half tin sweetcorn(no sugar no salt)
2 handfull frozen peas
1 handfull grated cheddar

place all veg in pan cover with water and simmer until cooked
blend then add cheese and stir till melted

Chicken , Squash and green beans

Half chicken breast
1/4 butternut squash
2 carrots
handfull green beans

Saute chicken, chop and peel all veg add to pan and cover with water simmer untill cooked about 12/15 mins , blend

Yummy chicken cassarole

Half chicken breast
2 carrots
2 parsnips
1 large potato or sweet potato
3/4 unsulphered dried apricots(organic)
good spoon of tomato purree
pinch rosemary

Saute chicken, add all veg and tomato puree and rosemary, cover wth water simmer for 30 mins then blend

All these make approx 6 portions, obviously i wash peel and chop all veg, dont add salt and use a little olive oil to saute
Hope someone likes them

This is pretty much the sort of thing I do though I probably only cook 2-3 things at a time. My freezer currently has the following home-made food frozen into child size portions (about 2-6 of each)

Spinach lasagne
Lamb pie
Beef cornish pasties
Root vegetable risotto
Cauliflower cheese
Bolognese Sauce
Chicken and courgette pasta
Beef & barley stew
Pork and vegetable casserole
Cheese and barley gratin
Lentil and vegetable stew
Meetballs
Lots of frozen home-made tomato sauce

It seems a lot of things but ds gets through them all in the required 3 months so dh and I keep stocking up and on a day to day basis I don't need to cook much. Just defrost and heat up.

I'm amazed you managed to cook so many things at once though - good on you.

THANKYOU THANKYOU more recipes to try!Always wondered about using tinned veg like sweetcorn and tinned tomatos but haven't yet. Any else use tins?

Use jars as well when necessary - particularly when out. I stand by my name - in fact I hate cooking so much I do it all in one go so I don't have to do it again for at least a week (ha ha )

Another question - when you use frozen peas - it says once defrosted don't refreeze- but I'm guessing that you do? Do you lazy cow?

Cheese and Barley Gratin

It's a recipe from an old book I have but I tend to just make it myself now and I'm afraid I'm not very good with quantities but I basically boil the barley in a good stock or water if you prefer. It takes about 30 minutes to cook

While it's boiling I slice courgettes and fry them (naughty)

Then I mix the barley with chopped mozarella, bazil, parmesan, parmesan cheese and some chopped fresh tomatoes.

Layer the courgettes in a baking dish, then add the barley mix then finish with a layer of corgettes on top.

Bake at 200oC for about 25 minutes.

Done - I think it is delicious though I know some people aren't too keen on barley.

Ds like it too but I have to cut up the courgettes more for him and take out the basil leaves Smile

If you want the quantities I will try and dig out the book and give you the official recipe.

I didn't used to refreeze frozen veg but I read on MN that you can cook frozen veg and then refreeze so I do now . Isn't MN great?

Just noticed I said parmesan cheese twice in the recipe- didn't mean to (though I do love parmesan)

Thanks lazycow - don't worry about the quantities probably wouldn't take too much notice of them anyway!:o
Sounds lovely. I'm always after veggie recipes for ds so will try this.
Do you know if barley counts as a protein like lentils?

Not sure if the barley is protein though the cheese is. I usually count the barley as the carb. Someone can always correct me though.

copied and saved these - great thanks - i have 7mth old and other than evry combo of veg and chicken I don't have many ideas. i'm sure she'll love the lentil one I'm trying that first.

Hi, so far ds likes them all espesially the lentil one, only one he is not too bothered about is the one with butternut squash but he does eat it!!
