Safe to freeze.......?

Just been folowing a recipe in the Penny Stanway/Sara Lewis 'Feeding your baby' book with ricotta cheese. The book says you can freeze it but the pot of ricotta says you can't.

What should I do? Have tons of the stuff!!

Have you ever frozen ricotta or other cream cheeses?

And is ricotta and mascapone cheese pasturized?

im not sure but you can freeze cheese cake, so i would

yes they are pasturized and IMO the freezing worry is whether or not the finished dish will curdle. I think it's worth a go, if it looks like it has split when you thaw it over night in the fridge then don't eat it, but in terms of germs it's OK
