What do you use to add tomato to your recipes? Tinned toms? Passata? Fresh? All her puréed end up with Philly in them and I want to give less creamy options

I would use any of these, but mainly tinned toms for convenience.

Creamy options are great for babies. They need a higher fat diet than us grown ups. But on the tomato question i would use any of those options, would just depend on what i was cooking and what i had in the cupboard/fridge!
