veggie babies!

is anyone else raising a veggie? I am, DP's not! But hes agreed to raise DS veggie, as long as we make sure he gets what he needs!
Im one of those crap veggies that eats chips all the time! I need some inspiration for yummy healthy dinners!

DH is veggie and I'm not so we are the reverse. Since I do the cooking, DD is going to be raised non-veggie. But obviously we still cook veggie food at least half the week.

I'm not a nutrionist so I might be wrong here. But I reckon children needs high energy food so I tend to do beans, cheese and eggs now, instead of something light and mainly veg based. For easy things, you can try variations of mac & cheese (very versatile and I love adding tomatoes to this), frittata/omelette, bean chilli, curries, baked potatoes, etc. And when time is tight, there's nothing wrong with cheese on toast (you can cut veggies onto it just like mac & cheese).
