Anyone have a risotto recipe?

I have some risotto rice I'd like to use for my six month old daughter.

Does anyone have a recipe?

butternut squash risotto

preheat oven to 180/350/gas 4

melt 25g butter and fry off 3 finely chopped shallots and 1/2 a butternut squash slowly for 5-10 mins

turn up heat slightly and add 175g arborio rice. stir thoroughly until rice begins to hiss

add a ladleful (out of 600ml) of weak low-salt veggie stock and let bubble. Add remaining stock and a tablespoon of chopped, fresh coriander.
bring to a simmer and then put in oven

stir after 15 mins and then return to oven for another 10-15 mins

when it's ready stir in 25g parmesan or cheddar.

I just fry off the rice with a little choppped onion with oil, add whatever veg is to hand, chopped up to appropriate size for baby/child (tonight it was peppers, frozen peas and squash) some chopped raw chicken breast, stir for a minute or so and add boiling water/stock. Simmer topping up with water/stock as it starts to disappear, for 20-30 minutes.

fennel risotto, or red pepper risotto. My dd loves them both. But frankly you can put any veg in a risotto. Has to be a reasonnably tasty one though, to conterblance the blandness of the rice. I also add some scrambled eggs into it, just before serving.
