Reheating food

Stupid question but if I'm reheating something from the freezer (beef goulash) do I have to heat it through so its piping hot, and then let it cool?

That was my understanding - yes, but not sure why you don't have to do the same for food in jars?

food in jars have already been heat treated so you could serve them straight away without heating. Frozen purees should be reheated to piping hot and left to cool to eating temperature exactly as you would with a frozen ready meal.
