Food intolerances - how soon after eating might symptoms appear?

I mean intolerances, not allergies.

DS was really unsettled in the late evening last night, repeatedly waking 5-10 mins after I'd got him back to sleep, over the course of about an hour and a half. It's unusual behaviour for him: he seems generally well and I don't think he's teething. Feeding him (which I did twice in that time) didn't seem to make any difference.

He had peppers for dinner and I wondered whether there might be a link. I have vague recollections of him possibly being unsettled after having them once before, but it could be coincidence or me mis-remembering. My mum is very intolerant to peppers. I'm not, but they do repeat on me rather a lot,.

I didn't know whether this was too soon / long after the meal to suggest an intolerance.
