I just want to share a delicious lunch idea with you all.
Last night I made a pasta sauce - sauteed onions and garlic in olive oil, then added a block of tofu, grated on the biggest side of a box grater ( I use Tofoo naked tofu). I sauteed it all until the tofu browned, then added passata, mixed herbs and salt and pepper and cooked for a few minutes.
It was lovely with pasta and salad last night, but there was a bit of the sauce left which I bunged in the fridge. (I hate waste!) I've just eaten warmed through, on toast, with a big spinach, chard and herb salad.
It was just so delicious, one of those strange leftovers meals that sometimes just really works.
It's been added to my list of favourite lunches. 😋
