Help with vegan friendly buffet food

We have a family celebration soon and have ordered buffet food from Waitrose. However the vegan options aren’t great with hardly any options - vegan sushi and fruit basically which I have ordered anyway.

For the few vegan guests coming I was going to make some sandwiches myself for them - any ideas on what fillings? I thought maybe I could get some vegan friendly ready made fillers to save time but I am struggling! Any help or suggestions?

I quite like hummus and rocket sandwiches and they’re pretty easy to make.

Yes the lack of vegan options from Waitrose buffet food is weird. Pret have some vegan platters if you want to save yourself the effort. But if doing yourself, yes to hummus and rocket, also avacado or guacamole, and cathedral city vegan cheddar with a nice pickle. (Most vegan cheddars are very plasticy).

Also a dish of carrot sticks with hummus -- it's a classic for a reason!

Jus-Rol puff pastry is vegan. Spread it with vegan pesto (which is delicious) cherry tomatoes, olives, sliced red onions and red and yellow peppers all tossed in a little garlicky olive oil, and bake.

Different kinds of humous with seedy bread sticks or sliced flatbreads.

Vegan sausage rolls from Greggs. Veggie DS begs for them when he comes home from working abroad.

Vegan sausage rolls - my top tip is to thaw a pack of frozen ones and then cut them into miniature ones before baking!

Vegan cream cheese and cucumber sandwiches

Coronation chickpea sandwiches

Puff pastry pinwheels with vegan pesto and sun-dried tomatoes in the middle (most ready made puff pastry is vegan unless it makes a big deal out of being made with real butter)

If you’re in North Wales you could get Dylan’s Vegan Sausage Rolls. They are so good!

Hummus and grated carrot sandwiches are nice, but of rocket in there too. Avocado and roasted vegetables is good too. Roasted veggies on puff pastry with vegan pesto makes a good quick tart (cheaper puff pastry is usually vegan friendly)

Ottolenghi has a lovely picnic veg recipe which goes nicely on crusty breads with hummus.

All of these sound lovely. Unless the rest of your guests are outright carnivores, be prepared for everybody to want to try the vegan food, so don't just make enough for the vegans. I am an omnivore and would automatically aim to try a bit of everything, and I'm sure I'm not alone!

The Tesco mini sausage rolls from the frozen section are the absolute best sausage rolls and I would echo the previous poster who advised making enough for all - these honestly get wiped out every time I've brought them to a buffet.

Falafel (assume they are vegan), pitta, hummus, salad.

Iots of people are suggesting hummus so i think you need to find alternatives for those who don’t like it - salsa, vegan mayo.
