Viva! - the vegan trailblazers

How young are your daughters?
I'd recommend going vegetarian first. I'm a vegetarian but a lot of what I eat is vegan. I eat a lot of pulses and not much UPF.
You can get a lot of ideas from cookbooks that focus on eating more vegetables because they have ideas on foods that work together well - but they might contain recipes that aren't vegan or vegetarian.

Lots of meals are naturally vegan and easy. Beans on toast or hummus and carrot sticks, for example.

If you like spicy food Meera Sodha recipes are good. Meera Sodha

The Pope & Pook So Vegan Easy book looks like it has some inspired quick meals. (I looked on that big South American river website and selected Read sample)

Vinted is your friend here as well, when I went vegan I got loads of cookbooks of there for a song. Deliciously Ella has a plantbased for the whole family book, the recipes are mixed, some really nice, some a bit boring but good info on nutritional questions including for young kids. Bosh, Mynewroots, the green kitchen (veggie and vegan), Plantbaes, and Gigi Grassia are all ones i come back to on repeat. The school night vegan is also good fun, blog and cookbook: https://schoolnightvegan.com/. Good luck and enjoy trying new things!
