Best Mushroom Wellington Recipe?

We did a trial run for Christmas yesterday and did the Bosh! Mushroom wellington and it was nice but the nutty mushroomy bit round the whole mushrooms was a bit bland.

Does anyone have a fairly simple recipe that is better? I’m not making pastry from scratch or anything.

The red wine gravy was brilliant though.

I love this one. It's quite a lot of ingredients and prep work but not difficult and tastes and looks great.

I don't I'm afraid, but I noticed that ordinary white mushrooms I bought from a greengrocer last week tasted significantly better than the supermarket ones I usually buy.
I've found the best way to cook them is in salted butter, adding extra salt and black pepper as it melts and letting it fizz for just a few seconds before adding the mushrooms.
I really think seasoning is key so perhaps try upping that a bit and just have a go at the mushroom part on it's own to test.

I agree seasoning is vital, and also reducing the mushrooms right down - cooking then dry so they get the sort of caramelised bits at the edges. As with onions, you almost always need to cook them much longer than a recipe says.

Jus-rol chilled puff pastry (the ordinary one, not the all-butter version of course) is vegan. No need to make your own.

Having looked at the Bosh recipe, I'd add some shitake mushrooms to the 'surrounding' mix, make sure you cook until really dry, and fry the onions to the point of caremiaation rather than just softening. You could also try a dash of soy sauce.

Thanks for these responses, it was actually a bit tastier when I had some for lunch yesterday, so going with the shiitake and soy sauce additions to the current recipe
