What can I put in a pie

Wanting to cook a roast dinner
But all the nice meaty type joints or anything nice ,is only available at Christmas.
I've made meat pie lots of times ,just using mince
What else could I put in a pie
Or alternatively what do you all use for meat substitute when doing a roast dinner

Mushrooms, lentil “mince”, root veggies, Mediterranean veggies, cauliflower and broccoli in a white sauce, chickpea tagine, beans? I’m not vegan, but enjoy plant based from time to time.

Soya chunks? Rehydrated and cooked in some stock and flavouring they're pretty good! Just treat them as meaty chunks once you've dehydrated them. Make a great 'chicken' and mushroom pie with a creamy sauce. Or instead of creamy sauce do a gravy?

New potatoes, spring onions, garlic, onion, cauliflower and broccoli, lots of herbs like thyme or rosemary. Roast all the veg 1st for extra flavour and use a white sauce as a base.

Not a pie but sausages in either creamy leek sauce or onion gravy go really well with roast potatoes, mashed carrot and swede, roast parsnips, green beans, and peas.

Make a Wellington. Spread mushroom duxelle over a sheet of ready made shortcrust. Make the filling with a mix of aduki beans, carrot, red onion, red peppers, red lentils. Let it cool and make the wellington. Serve with caramelized onion gravy. If you make loads of both fillings you can freeze portions and it only takes 30 mins to do a wellington.

I do a white bean casserole with creamy mustard sauce that would go nicely in a pie.

I saute chopped onions, and sliced carrots, until nearly cooked, add some veggie stock, thyme, a teaspoon of English mustard and some smoked paprika and a tin of either butter beans or cannelini beans. simmer until the stock is reduced somewhat, and then add some soya cream.

I'm sorry there are no real measurements, I kind of just play it by ear.

As a pie filling I think this would be nicest with a shortcrust pastry or a mashed potato topping.

For a super easy vegan pie, I use puff pastry - a lot of it is vegan - and just fry lots of chopped mushrooms with olive oil and garlic until they’re dry and then make a little thick gravy from some gravy granules (surprisingly many gravy granules are vegetarian, although if worried about cross contamination / it not being vegan you can use a vegan one) and chuck in some dried porcini for extra umami / savouriness. I put a little of the gravy in the pie with the mushrooms and reserve the rest to pour on the pie and accompanying veg.

Veggie sausages go well in a toad in the hole, but I have yet to perfect vegan Yorkshire’s although I understand you can make decent ones with aguafaba and there are loads of recipes for these online.

Sometimes organic delis and health food shops sell frozen vegan Clive's pies. You might be able to get them in Waitrose too. They're a little bit pricey for one, but lots of different kinds to choose from, or even to give you ideas. It sounds as if you'd rather buy something than make it from scratch.

I've just remembered that M&S do single serve vegan mushroom pies in their plant-based chilled section. They're not bad at all. Available all year round.

Clive’s pies are fantastic.
I sometimes get them from Sainsbury’s.

I buy mock chicken and mix it with peas, sweetcorn, leek, fake cream and tarragon and make a 'chicken and leek' pie which is very tasty. I also love button mushroom, parsnip and blue cheese pie (if they're veggie and eat cheese), or another cheese if preferred and that usually goes down a storm too.
