High protein vegan breakfast ideas

Good morning!

Just eaten breakfast and feeling a bit bored with it. Hoping for some inspiration please!

My protein goal is 150g per day. I generally look to start the day with a decent sized meal that takes a bit of time to sit and eat. Gone are the days of inhaling 4 pieces of toast on the go without registering I've even eaten.

Usual breakfast is usually 40-60g protein and based around scrambled tofu, but I'm looking for something different. Savoury or sweet. No allergies or dislikes except tempeh. That stuff can get in the bin. Not concerned about calorie intake as calorie goal is generous enough to not have to worry (I usually allocate 600-900cal for breakfast).

Thank you!

Vegan sausages (Linda McCartney?) with beans, tomatoes and mushrooms
Vegan yogurt with fruit and shredded coconut

I like baked oats with some Greek yoghurt on the top-obviously you would have to use vegan yoghurt and substitute the egg for something else!

I'm vegan and this is my is my go to breakfast. 30g porridge oats, 5mgs peanut butter protein powder, frozen fruit (I like mango/cherries/raspberries). Topped with 300mg natural soya yogurt.

Leave it sit for 30mins and it's the most delicious thing ever. Protein is 32g per portion

Tesco’s own brand plant based greek yoghurt and Holie’s protein granola with some powdered peanut butter sprinkled in

Last night I made mixed quinoa with apricot, pomegranate, tahini, orange zest and freshly squeezed orange with toasted pine nuts, sesame oil, cinnamon and mint. It was a salad but could easily be breakfast.

Or you could do overnight oats with alpro vegan yoghurt, ground almonds, grated apple, chopped pecans, maple syrup and cinnamon.

It's processed, so I don't know if it's your thing, but DS cooks vegan bacon with a drop of smoke flavouring and maple syrup, in a high protein seedy bagel.

You could fry cherry tomatoes with garlic and have them with avocado on whole grain toast.

PBJ on seedy/protein toast or bagel with oatmilk and banana smoothie.

A big bowl of muesli with grated apple, frozen blueberries or chopped strawberries and almond or oat milk would be high calorie and very easy.

Dal?
Hummus?
Spinach and Orange Salad?

I make these vegan sausages but quite thin in a big square tray and freeze them in pieces; they defrost quickly. www.facebook.com/share/p/16GrMeCGrq/?mibextid=wwXIfr Lentils and chickpea flour mean reasonable protein content? Could have in high protein buns or bagels

RosieMilkJug · 21/04/2025 10:26

Chickpeas.

Pancakes made with chickpea flower.
Roasted crunchy chickpeas.

RosieMilkJug · 21/04/2025 10:27

Obvs that should be flour , not flower.

Make your own quinoa and courgette bread?

Wigtopia · 21/04/2025 10:28

Something with butter beans might work well. Like Gigantes Plaki recipes.

Right now I’m having air fried tofu with a tiny bit of oil, then braised for 5 mins in Korean sesame-soy-garlic sauce that I make a quick batch of every week (Dubu Jorim). Then add wilted spinach.

the sauce is literally pouring the ingredients into a jar and shaking, no cooking required.

thestudio · 21/04/2025 10:40

I’m also getting into fermented pickles so thinking of a few pickley things. I also make kimchi so I have that on the side of the Korean tofu above.

I’ve found soy strips marinated in various ways and air fried really good and quick.

tofu sprinkled with soy and liquid smoke and nooch, fried and in a sandwich with branston and mayo gives a good impression of BLT if feeling more mainstream.

Basically I don’t really have breakfast food, I just eat the stuff I like at other times and try and streamline it.

Beans on toast, possibly with vegan cheese if that works (not vegan so I have no idea).

Avocado on toast.

Can you make your own bread? If so you can add nuts and seeds to up the protein.

There is a breakfast café near me that does Indian breakfasts. Could you face a chick pea curry first thing? Maybe with a couple of samosas?

Nasi Goreng, you need day old cold rice so probably best done the day after you have had rice for dinner.

Darkclothes · 21/04/2025 10:48

Chick pea flour fritters? Grated courgette, onions, corn can all be included.

Gram flour pancakes

UpEarly · 22/04/2025 18:28

Chia pudding, or just add chia seeds to some overnight oats with plant-based milk. Add a few berries and a blob of peanut butter or even EVOO for all its nutritional value (been reading Tim Spector, he's a big fan!)

Gymbunny2025 · 23/04/2025 21:16

what training are you doing to need all that protein and calories @PigInADuvet?!

Chickpeas.

Pancakes made with chickpea flower.
Roasted crunchy chickpeas.

Chickpea or lentil flour pancakes are delicious. This is a great idea.

Fuck all 😆
But on a mammoth weight loss mission (like 80kg to lose kind of mammoth. I am a literal mammoth) so more preservation of lean body mass at this stage.

30kg down, 50kg to go so the exercise will start soon 🫠

Thank you for all the suggestions, I have added several things to my grocery delivery and tomorrow shall attempt (again!) chickpea flour omelette. Previous attempts have been a disaster so any specific recipes welcome!

I'm veggie, not vegan but would suggest experimenting with chia seed pudding, overnight or baked oats and fruit scrambled tofu, berries, daal, chickpea or lentil pancakes, I love Spanish espinacas con garbanzos (spinach and chickpeas) for breakfast . I blend a few chickpeas instead of bread for thickness.

calmingpompoms · 25/04/2025 20:04

I liquidise tinned cannellini beans and freeze them into portions so I can add them into whatever I want. We have it in porridge every morning and you wouldn’t know it’s there.
obviously with a tonne of nuts, seeds, wheatgerm, dried and frozen fruit

Also you can add these into pancake mixture.

Feelinglikeadiv · 25/04/2025 20:06

Oh, banana ice-cream. Freeze bananas find the right vegan protein, maybe tofu? Blend, maybe add cacao if you like, sometimes I do sometimes not? I use kefir but absolutely love it.
