Vegans: What are you eating in Easter Sunday

Share your menus for inspiration please!
I have a busy weekend so don’t want to be too ambitious but also want our lunch to be a bit special.

I am the only vegan, but everyone happy to eat vegan. However my mum can’t eat onions or garlic and MIL doesn’t like tofu which means we tend to have the same things on rotation or cook multiple meals.

DH does a lovely mushroom and Guinness pie that they have all been happy with

Otherwise we do a lentil cottage pie that they like, but it doesn’t feel very “Easter”

Other option is a fake meat roast

I am having a seitan and apricot tagine with loads of bits of the side like jewelled couscous, an onion salad, hummus, flatbread etc.

A roast, a little bit special with cauli cheese, chestnuts and stuffing.. I'm thinking of making pina colada cheesecake for pudding unless its raining.

Are you having a protein or centre piece "thing" as part of your roast @SisSuffragette? We do cauli cheese with ours and surprisingly the omni pensioners eat it. Do you have a recipe for the cheesecake? That sounds amazing!

We will be having a vegan roast -
All the trimmings and possibly a pie. Wine to go with it and followed by omv Easter egg.
