Lentil salad wirh sundried tomatoes and olives

I have been googling but haven't found what I'm looking for...

It is a salad made with green/brown lentils, sundried tomatoes and olives. I used to buy it in a naice deli on my way to work in Edinburgh - think it was greek, but no feta in it.

Does anyone know what this is called or know a recipe for it pretty please?

Thank you- I don't think that's it unfortunately

It had some sort of vinaigrette/lemongrette on it and possibly mint and parsley. I don't think it had any fresh veg in it and it came in a little pot in the chiller section of this little, greek/Mediterranean supermarket/deli

I would make it with green lentils, brown rice , black beans , sun dried tomatoes, chopped olives and fresh coriander.
I’d toss it with sesame oil, good balsamic vinegar mixed with za’tar

I’d make a batch of it, and each day put fresh tomatoes, cucumbers and other veg .

That sounds lovely @Pinkissmart and I may give that a go

But the one I'm thinking of was definitely more greek/Mediterranean in flavour

Could it have been a tabbouleh type salad. With lemon mint and parsley

Actually, the flavour was very lile tabbouleh! But it didn't have any bulgar wheat in it

Is it the same company that make tabbouleh, houmous, chickpea salad in little deli pots, sometimes find them in budgens garage

Aldi and Lidl do nice packs of flavouredl lentils. You could mix them with other veg and some olives, put a bit of vinegarette on it to replicate.

That looks like the one I had, it was nice.
I usually just make a lentil salad with a tin of lentils, lemon juice and oil if I'm at home but this thread may inspire me to jazz it up a bit more.

That does look really similar, but it isn't that exact one.

But I've looked at the ingredients for that one on another website and it says capers which I think there might have been in the Edinburgh one too actually.
