Low key dinner party for 8, 1 is vegan.

I’m looking for recipe ideas please for an easy to make, easy to serve vegan dish for all 8 of us.
A suggestion so far has been jackfruit curry.
2 of the party are staunch carnivores so I’m looking for something that might appeal to their tastebuds.

Any suggestions very gratefully received

A vegan lasagne?

we are vegan and I use various lasagne fillings - if I use soya mince it is almost ‘meaty’. or if I go the other way and use only courgette, aubergine and peppers then it’s not pretending to be meat but is delicious.

I serve these up to omnivores too - no one has her complained ( to my face at least 😉)

I'd do some spring rolls and vegan gyoza to start
Then a Thai red peanut curry with sweet potato and spinach and coconut milk. The peanuts and spinach provide lots of good fats and iron and protein. Soy sauce for umami. The carnivores should be happy but you could serve some steak or chicken strips on the side for them to add if they're desperate ?

Adding chickpeas for texture. It's need lots more spice than the recipe calls for - 2-4 times as much or is very bland.

I would probably do a chicken curry as well if I had time, gives some variety but all easy to serve with rice and roti or naan

I'd go Middle Eastern. Meze for starters: baba ganoush and tabbouleh, served with Flatbread.

Main course: Imam Bayildi

Is it important that it is vegan or that it feeds everyone?
If the latter then a build your own meal works for all as people can choose items they like.

I'd go for a meal involving lots of different things - middle eastern or Indian would work well, do one meat and one vegan stew/curry. Serve with appropriate breads, rice, a salad/other sides and everyone helps themself. Tacos would also work, again with a meat filling such as pulled pork and a vegan (black beans) option, plus salads, tacos, cheese for meat eaters, avocado and salsa (a friend recently made pineapple salsa - that was great!). These are the cuisines that I usually go for when catering for one of my vegan friends.

I wouldn't do this. I'd make what I wanted for the 7, adjust or make a separate one for the vegan. Many of my friends are vegan and I have a few dishes and recipes that I can adapt, or easily make one part vegan. In fact I always cater for vegan and gluten intolerant, so all are covered. Most are very grateful.

Eg Marinated chicken kebabs with 5 spice, make a bag of tofu and a bag of just veg ones, all are sorted.

Make a veggie chilli for everyone (a million recipes online for this - just pick one). Add a nice steak to the carnivores’ plates. Easy and everyone is thrilled.

Thank you very much for all the suggestions. I have opted to do two chilli dishes , one meat and one vegan (I already had a recipe in my repertoire for a vegan bean chilli that I’d forgotten about 😊)

I’m going to hunt for the pineapple salsa recipe as I really like the sound of that. And I’ll make guacamole.
