Easy but good vegan recipes

I'm not much of a cook, and nor am I a vegan. But my SIL is a vegan, and will be staying for a few days. I would like to spoil her a bit. Conditions are nothing too spicy, and no mushrooms. Any good ideas? Or suggestions as to the best websites to look?

Sainsbury's sell vegan pesto. That with chickpeas and pasta is a nice easy dish.

Amanda ducks on YouTube has loads of good recipes.

If you want something easy there are loads of options at Aldi - their freezer section is so good and their 99p tofu block is also great.
