What are your top 5 dinners?

For a variety of reasons, I’d like to try a vegan diet. I’m indecisive and don’t really enjoy cooking that much.

I’m after your top five dinners to save me searching through recipe books and being disappointed with the outcomes.

Dhal, Black bean chilli, Tofu green curry, Dan Dan noodles, Lentil bolognese

Thai red veg curry
Spag bol with vegan mince or lentils
Dal and rice
Roast dinner with lots of roasted veggies
Fajitas with lots of veg and or Quorn chicken pieces

If you don't love cooking, I recommend batch cooking and freezing.

I would say if helps if you like a little spice as we eat a lot of curries and chillies etc

Vegan sausages veg and gravy.
Baked potatoes with smashed chickpea salad and coleslaw.
Pesto pasta with broccoli and salad.
Lasagne.
Roast dinner.

My husband does most of the cooking in our house and will definitely not be on board with this. Neither will my teenage sons.

We eat a lot of pasta, chilli and curries but seen as how I will have to cook my own, batch cooking will be a good option.

Teriyaki tofu bowl with sticky rice and any veg you have

Miso aubergine tacos

Coconuty peanut and chickpea curry

Toasted falafel baguettes ( great for nights you can't be bothered to cook!)

Veggie fried rice

Loads of pasta options! You can buy vegan pesto, or vegan cream and make mushroom stroganoff, lentils or tvp for lasagne or spaghetti bolognese, vegan mac n cheese using butternut squash etc.

Loads of curry options too, there are lots of vegan jars of curry sauce if you’re ever needing a quicker option and you can add vegetables/ beans, lentils or chickpeas/ tofu/ quorn etc depending what you prefer.
