I made some seitan sausages. They have been steaming for one hour 15 and are ready to meet the world.
I burst the foil on one, but they'll be fine.

one and a quarter cups vital wheat gluten
quarter cup garam flour
2 tsp bouillon
2 tsp nutritional yeast
white pepper
nutmeg
paprika
fresh herbs, sage and lovage
a small sweet potato grated
one cup of water
one roasted red pepper, well chopped

knead very well

wrap in parchment and then foil, steam for 1.25 hours
They taste like Cauldron sausages

Anyone else make seitan?

I'm impressed. I have a bag of vital wheat gluten in the cupboard (unopened) for this purpose. Haven't got around to using it yet but must try...

Does this recipe ditch the VWG taste? I tried several recipes but can't get past that taste. I keep meaning to make my own gluten to see if it tastes better, but what a faff that seems.

The washed dough method generally does taste better. But washing dough is a messy faff and putting that much starch down the sink made me worry for my drains.

In thee ones the high amount of veg pretty much sorts the taste, use the jarred red peppers, cheap from Lidl or B&M.

Another method that sorts the taste is to replace some of the water with cider or wine. Then I poach the stuff unwrapped. The Americans use apple cider vinegar.
