Family lunch ideas please!

We usually have hummus & pitta, quiche, shakshuka, cheese on toast or beans on toast for weekend lunches but dd is doing Veganuary so I need some more ideas please. I need simple ideas that children are willing to eat and not processed alternatives. I realise I'm asking a lot but I'd be very grateful for any suggestions. Patia

  • Homemade soup and homemade bread is a pretty standard winter weekend lunch in our house. Loads of possibilities for vegan soup.
  • Wraps with Hummus, black beans, grated carrot and salad leaves
  • Chickpea chaat
  • Falafel and Hummus
  • mushrooms on toast or stuffed mushrooms

Risotto made with veg stock and whatever veg they like
Pasta with tomato sauce/vegan cheese
Roasted vegetable wraps
Stir fry veg and quorn
Noodles
Salad with warm quorn
Couscous with Mediterranean veg

Falafel/ hummus wraps or pittas
Nutritional yeast is great instead of cheese on top of beans on toast
Stuffed peppers with beans/veg maybe with homemade garlic bread
Mexican wraps with beans and salsa

I don't like doing too much cooking at lunchtime, so usually go for things like:

Soup - this is good as you can make a big batch of it.

Wraps - with houmous and/or falafel, lots of salad, avocado, etc

Salad - similar to the wrap but without the wrap 😂 mixed seeds a good addition

Beans on toast

VLT - BLT but with vegan bacon. You can make your own with tofu if you prefer not to buy processed

Noodles - a bag of stir fry veg with some straight to wok noodles

Simple stuff:

Tomatoes on toast (tinned or fresh, with seasoning)
Mushrooms on toast
Beans on toast
Tomato soup with toast

Toast is a lot nicer btw when it's a decent rye sourdough or similar. A lot less gluten and tastes better. But it can be more expensive than other bread, depending on what you normally eat.

Black olives and jalapeno slices from a jar are good additions.
