What would you like for dinner if ........

You had travelled 4 hours after work on a Friday and were going to a wedding the next day? We have family coming to stay at our place for a wedding, two of the 6 are vegan, and we won't be here so I want to leave something for them to either heat up or part cooked and just needs popping in the oven for 20 mins or so.

My thoughts were as follows: (not terribly inventive but we will be busy at the wedding venue itself so can't be faffing about too much 😂)

*Veggie chilli and part baked potatoes, vegan cheese

*A big pot of veggie soup and bread (we have pumpkins and squash in the garden so they could be useful here)

*Vegan curry, rice and flat breads (though not sure about curry the day before the wedding and I think the vegan choice in the day itself might be a curry of sorts

*Vegan tart (suggestions?), roast potatoes and salad

Or something completely different? 😂. I'm a decent cook and possibly something warming would be good as they are coming at the end of October.

That’s really lovely of you to think of them.
Personally I would hate to turn up at an event and have garlic breath from the meal I had the night before so I’d not want to eat curry or anything but accept that might just be a me issue.

Are you sure they won’t stop to eat on the way to your house? I would be thrilled with a hearty soup and bread or a quiche/tart and potatoes with salad.

I'd take the easier option and make a big pot of soup that they can all eat, and plenty of fresh crusty bread. If you're busy at the venue you'll have enough to do.

@ProlifiInProfanity thanks for your reply and the suggestions. I don't think they will stop off en route and it's a bit of a pain for them to bring food up with them as they'll already have a car full (people plus wedding clothes).

A hearty soup does seem the easiest option. Just wondering if it will be enough. I guess I could go for one like a minestrone with vegan Parmesan as that's quite filling.

My thoughts too hellscat. We are making food for the wedding venue too for the night before so I'm trying to keep it simple whilst being welcoming 🙈. And catering for 3 grown men (not vegan 😂) who have very good appetites!!

Oh that’s so nice! The soup calls to me the most. Other than that, my suggestion would be Hungarian mushroom soup (made with oat milk) and loads of dill, chives, and lemon, crusty bread on the side and vegan crème fraîche/sour cream.

Oh heavens, the vegan chilli and potatos or the big hearty soup appealed to me (Not vegan though.... was for about 8 years though if that counts?)

But it all sounds utterly blissfully divine.

Definitely soup and good bread. You could use a grain of some sort in the soup to make it more filling: lentils, split peas, pearl barley…

The veggie soup sounds like a great idea, maybe add lentils to bulk it out and serve with fresh or leave part baked crusty bread. And maybe a small shredded ham joint from the deli counter for the non-veggies to add into theirs?

Great ideas! Thanks everyone. Will definitely go with the substantial vegan soup using pasta or pulses and nice bread option 😊.

Breakfast is easy as I can just stock the fridge making sure there are vegan spread options, cereal, oat milk as well as bacon and eggs!

I'll add to the votes for the soup (or the chilli). After a long journey I just want something simple and easy to eat. Especially as they're arriving late. I struggle to sleep if I eat too late so some veggie soup sounds perfect. People can eat a small or large bowl depending how they feel. Nice though the tart and roast potatoes sound it would feel a bit much I think. Agree with all the other comments on curry the night before, especially if there's something similar on the wedding menu.
