Vegan fajitas

Hello,
what can I use to make vegan fajitas?
I don't like any fake meat in them. I'm planning peppers, onion, maybe aubergine? I feel like I'm missing some other vegetables.
I'm making salsa and guacamole.
I haven't had fajitas for years and I'm craving them!

Pink onion recipe. Method is just mix all together in a bowl!

For the black beans this is a good one;

then just roast some butternut squash with similar spices.

usually though I just wing it. Throw diced butternut squash, onions and peppers in a roasting tin with a little oil and spices (cumin,coriander,paprika,garlic powder), roast for 20-30 mins then add a tin of black beans for an extra 5-10 mins so they get a bit crispy too.

I love baby corn & mushrooms in vegan fajitas. Also sometimes use Fry's "chicken" strips.

I like peppers, onions, mushrooms, tofu. I’ve had lovely veggie ones in a restaurant before that had peppers, onions, carrot matchsticks and baby potatoes. I’ve also used a green lentil taco filling in them (lots of recipes online).

I use the usual onions and peppers but also put in butter beans which work well too I find as they have a good texture for fajitas. I’m not vegetarian or vegan but often cook them as I prefer them to using chicken now.

How weird, I made butternut squash and black beans yesterday, made up to try and replicate a nice PieMinister empanada I had the other day:

I fried sliced onions till soft, added garlic for 2 mins, pushed it all to the side and added spices - smoked paprika, ground cumin and coriander, bit of cinnamon or allspice, ancho flakes if you have - roasted for 3 mins or so, then add a good couple of tbls of chipotle paste and some extra tomato paste, cook for a few mins, added nearly a pack of frozen butternut and once that's defrosed add a tin of black beans and a tin of kidney beasn. It was even more delish today with crushed avocado with lime and salt sprinkled on, a few sprigs of coriander, coconut yoghurt, and pico de gallo - te best salsa ever, [[https://www.simplyrecipes.com/recipes/fresh_tomato_salsa/ this recipe is so good]

DH makes vegetarian fajitas for me. You would need vegan cheese and vegan soured cream.

The filling is peppers and onion in a spice blend, refried beans, loads of shredded iceberg, guacamole, jalapeños, grated cheddar and soured cream.

Sweet potatoes or Butternut squash, I make something called a Peruvian burrito which is sweet potato, peppers, black beans, and then a cashew dressing.
Paprika and cumin go in the black beans with a mild/ hot chilli powder.
I usually put cumin on the sweet potatoes and bang then in the oven to roast. Fry off the red onions and peppers, and I also make a small portion of quinoa to have with it too

Cashew dressing:
Cashews, lime, fresh coriander and green chillies blended.

Roasted cauliflower coasted in fajita spices is a favourite here.
With salsa and guacamole, you won’t miss the cheese.
