Easy vegan low carb breakfast

I'm needing to cut down on carbs. I find lunch and dinner quite easy but struggle with breakfast as I don't have a lot of time to prep anything.

Any suggestions for easy/quick and low carb breakfast?

Do you mean low carb as in fruit as well? Could look at some shakes/ vegan yoghurt muesli and fruit. If you get more time fried mushrooms tomatoes and veg sausages.

Not saying no to fruit but I do prefer a savoury breakfast.

I'd eat toast all day every day if I could!

I have been making smoothie bowls recently. I use frozen mixes so it’s easy. Obviously they are usually fruity but you can dial down the sweetness with more veg. I add some soy powder and seeds.

Scrambled tofu? You can add all sorts of flavourings to it, depending on your tastes and mood. V easy too.

Mushrooms fried with fresh thyme, on toast. Or tomatoes.

Porridge with sultanas although that might be a bit sweet for you. You could have porridge with hazel nuts

I have green smoothie bowls: a banana, spinach, kale and avocado blended up with chia seeds sprinkled on top. It's lovely!
