It's my sons birthday next weekend and all my family are coming over for food. My vegan BIL always gets the raw end of the deal with just vegan Sausages or something shoved in the oven. I want to make him something that everyone else wishes they were eating! It needs to be made the day before and either eaten cold or just warmed up on the day. I was going to do pulled pork type stuff for the meat eaters. Give me your best recipes and I might just do it all vegan. Thanks in advance!

Pulled jackfruit? Served same as the pulled pork.

Could you do a vegan chilli? Carnivores could have cheese with it. BIL could have vegan cheese. Guacamole and some tortilla chips and sorted!

Or a big pan of chickpea curry, with microwave rice and bought breads. carnivores could have meat samosas on the side.

Or vegan hotdogs? Meat eaters can have meat ones or the pulled pork in cobs. Maybe some roasted corn on the cob? Or sweet potato wedges?

Jamie Oliver has a daal recipe in his 15 minutes cookbook. You basically whizz up onion, garlic, ginger, a red pepper, a chilli & coriander stalks in food processor, fry for a bit, then add red lentils, curry leaves curry powder water and a can of coconut milk and boil for 15 mins, then add spinach. I add a can of chickpeas and maybe some other cooked veg like sweet potato. Is delish.

Stuffed aubergine and peppers, stuff with a mixture of rice & diced vegetables such as onions, garlic, tomatoes, courgette. If it seems a little dry, add vegetable stock to moisten. Serve hot or cold.

Vegetable flan, a lot of prepared pastry is vegan, or make your own. Fill with things like roasted Mediterranean vegetables, onions, leeks. Cooks quickly, serve hot or cold.

As a side dish you could do cous-cous or lentil salad.

I make a vegan potato salad that's also suitable for people with IBS (low FODMAP) and low fat, and everyone really likes it. So it's basically cooked potato chunks, finely chopped tips of the green bits of spring onions, salt and pepper and Heinz vegan mayo. (Other brands are available but this one's good Grin .)

Another favourite with everyone is cooked rice mixed with vegan mayo, curry powder, peas, and sweetcorn. Maybe a bit more of that finely chopped green spring onion and seasoning.

Both very nice with chopped fresh tomatoes on top with some extra seasoning and/or herbs.

I can't eat chickpeas now, but I used to bloody adore falafel with flat breads and salad & pickles and chilli sauce.

A lot of crisps are vegan, btw.

I second falafel, houmous, chutney etc. One of the nicest street foods I've had is from a company called Eat Shoots and Leaves, they put together the falafel, houmous and chutney with herby sauce, salad and and served it in a wrap with dressed pasta salad and chips. It was delicious 😋
