Vegan microwave / BBQ cooking ideas for kitchen refit

Family of 4, one vegan, one veggie and 2 omnivores, but we often all eat vegan for simplicity.
We'll be without a kitchen for 2-3 weeks. Happy to eat out for some but not all meals.
We have a small microwave, kettle, toaster, gas bbq.
Im thinking Ill freeze a couple of portions of curry or chilli to microwave - probably with veg that dont go too mushy when frozen so maybe potato, carrot and chickpea for curry.
Can do linda mccartney sausages on the bbq, or maybe bbq spicy veg with couscous.
I dont use the microwave much except reheating so dont have much experience of cooking meals in it. Any ideas of things that work?

When I’m feeling lazy, I get vegan meals from ‘Cook’. A lot of them are microwaveable, but not all, so check. They are quite pricey, but taste ‘homemade’, and are cheaper than eating out.

I’d be making lots of cous cous / quinoa / rice salad bowls

You can cook rice and quinoa in the microwave, you can also stem veg in the microwave like broccoli / spinach etc

I think you can cook pasta in the microwave too but I’ve not tried it so not sure how it turns out

I’d also be looking at easy wraps to make like tuna/sweetcorn or hummus and veggies

Skewers and great for the barbecue with halloumi and veg

‘Baked’ (microwaved) potatoes with beans would be another quick and easy meal
