Gluten free quick vegan lunch idea's

I would love to know if anyone has any quick gluten free lunch ideas? I don't want to get sick of humous and I am trying to choose more vegan (with the hope of becoming completely vegan) options. I've got breakfast and dinner down but lunch is my downfall!

Half a packet of ready cooked rice or quinoa with half a tin of lentils, chopped tomatoes, coriander and tahini dressing. Delish.
Vegan pate on oatcakes or ryvita

I have a salad with falafel or left over vegan sausage/meatballs or spicy roasted chickpeas.
At home i sometimes have beans or vegan cheese on gf toast or a baked potato with beans/cheese/leftover curry.

Rice/grain pouches or tinned pulses made in to salads with variety of chopped veg and herbs e.g.:

wholegrain rice, quinoa pouch, chopped avo, sun-dried toms, loads of herbs, oil and lemon juice.

Tinned black beans with chopped pepper, spring onions and vinaigrette dressing.

Assuming you use/have GF bread etc

Peanut butter sandwiches
Bean chili
Vegetable based soups

When you have time, bake a potato in advance, leave to cool and then refrigerate.

Use it as the basis for a number of quick meals. E.g. heat as is or scoop out the inside for instant mashed potato. Serve with baked beans leftover chilli, curry, or just vegan margarine, salt and pepper. Or chop and fry the cooked potato with onions and leftover cooked cabbage or greens. Or chop and mix with a tomato based sauce, adding some smoked paprika.

Ryvita isn't gluten free! Soup with cheese and oatcakes, roasted vegetables cold as salad, Spanish omelette.

@Mamabear04 it's tricky isn't it?

These are some of the things I have:

Chickpea salad - canned chickpeas, sundries tomatoes with some of the oil, olives, any other veg you like plus greens eg watercress or spinach. Season and mix.

Soup - pre-made and just heat.

Smash up avocado, season with lemon, olive oil, salt and pepper and eat with oat crackers.

Nut butter sandwiches with gluten free crackers (I don't eat bread), if feeling particularly lazy.

I always have a fruit and a handful of nuts with my lunch (or finger food salad if having nut butter sandwiches).

I eat soup most days! I batch cook at the weekend then just reheat throughout the week.

I've been batch cooking an Aubergine Curry and portioning it to freeze - and then taking to work to defrost ready for lunch time heating in the microwave! Gluten free and vegan!
