Low carb vegan foods

Hello all, I need to lose weight! what are your low carb vegan dish ideas please?

A bit late but I thought I’d add to this. I am trying to do low carb to lose some weight and I am struggling myself!

Some of the meals I have come up with are

-cheesy garlic mushrooms and asparagus for breakfast (no bread)

  • soya mince chilli (no beans) with cauliflower rice and half an avocado
  • stuffed soya mince bolognaise peppers, grilled with salad
  • a big bowl of brocolli with gravy and a sprinkle of cheese (honestly sounds trash but it’s still low carb!)
  • Mexican cauliflower rice - minced cauliflower, minced garlic, small red peppers chopped, onion, cumin, Cajun spice, lemon juice roast in over for 25 mins and stir through some coriander when done Grin
  • blueberry and lemon juice smoothie is my main fruity carb fix for the day, I will have this after any exercise

I’m definitely not low-carb Grin but here are some ideas:

Soya-based vegan meat alternatives such as burgers, meatballs - could have with zucchini noodles or something if that’s your thing,

Vegan soya chicken (Naked Glory, M&S, Iceland, ASDA), fry it up in some olive oil with some nice herbs and spices and chuck it in a nice salad

Tofu - cube and pat dry, then fry in olive oil and add some soy sauce/seasonings of choice, add to a nice veg stir fry

Seitan - can be expensive/tricky to find (you can also make it very cheaply at home) but you could try the Granovita tinned mock duck from Holland & Barrett/ASDA in a stir fry or something

There are quite a few low carb vegan protein bars around nowadays (eg the MyProtein/MyVegan vegan carb crushers, or Missfits brand protein bars) although I tend to steer clear of sweeteners because they upset my stomach a bit - if this isn’t the case for you, might be worth giving them a go. Similarly, if you can stand protein powder there are lots of vegan protein powders around nowadays (again MyProtein or MyVegan are good places to order and they usually have some kind of discount code going)

So you could do something like:

Breakfast: Protein shake + protein bar OR Protein shake + scrambled tofu and veggies (mash 1/2 a block of tofu with a fork, add a splash of soy sauce, some garlic powder, paprika, turmeric etc. Fry some very finely diced pepper, onion, mushroom in some olive oil then add the tofu. Could also add some vegan sausages - Richmond meat-free or Linda McCartney ones are nice

Lunch: Peri-peri (or similar) soya chicken in a nice salad

Dinner: tofu or seitan stir-fried with loads of veggies in a tasty sauce

Snacks: protein bars/a few nuts/veggie sticks

I’m not vegan but I am avoiding meat and dairy and also low carbing. I haven’t been doing it for long but it is doable although might become repetitive as quite restrictive.

For breakfast I’ve been having guacamole on seed crackers. Most soy yogurts are zero carbs so you could have that with protein powder, nuts and seeds, maybe a few berries.

Lunches are salad and slaw with some protein. Linda mccartney original sausages are fairly low carb but most sausage/burger replacements aren’t. Tofu is good. I’ve cubed it and tried a couple of marinades and baked it.

Veg curries, particularly coconut based ones are good. I really like the Happy Pear’s 5 minute dahl so Ive had that replacing the lentils and chickpeas with diced courgettes and mushrooms. Takes a lot longer than 5 minutes though if you want everything cooked properly and to allow the flavour to develop.

I’m going to keep an eye on this thread for ideas.

Tonight we are having Chinese marinaded jackfruit with salad and grilled garlic and soy pak choi on the side.... probably low carb enough to make room for a gyoza or two as well!
