Vegan ideas for leftover mash?

I’m not vegan but trying to be more plant based mostly. Usually with leftover mash I’d make fishcakes.... I can’t immediately think how to veganize that or what else would you do (rather than have it as mash again!!!)

Mash made with olive oil btw. Yum.

Boil some finely chopped veggies like carrots and cabbage and add that to the mash and frey off in patties. Bubble and squeak patties 😍

I just freeze left over mash and use it next time mash is needed, most on mash topped pies.

Bubble and Squeak or rissoles with leftover veg.

Cooked Lentils instead of fish to make lentil cakes. I'd spice these up quite a bit to make them more interesting.

Potato cakes,

Patties, mix with sage and onion dip in batter and deep fry.

Crispbakes, mix with cooked cauliflower, fried spring onion and vegan cheese coat in bread crumbs and fry.

No idea what it's like but Holland and Barret t sell fake tuna, so you could still try fish cakes.

You could make similar but with vege, maybe Thai style.

Yeah definitely bubble and squeak. Cabbage/ carrots/ any veg you like really, mixed up in the mash and pan fried.

Those lentil burgers sound lush too... just do as you did with the fish cakes but exchange the fish for some nice veg.

I usually make bubble and squeak as well, but you could also just add more mash to it and use it on something else. No reason it won't keep in the fridge for a day or two.

On a side note my favourite way to make mash is to boil some butter beans along with the potatoes and mash them all up together. You can't really tell the beans are in there (especially if you leave the skin on the potatoes like I do) but it's a good way of sneaking more lysine rich protein into your meal.

Soup! Any (non red) odds and ends of veg from the fridge in pan with mash and veg stock, blend. Normally I grate in some cheese, but nutritional yeast should work.
Just don’t add peppers or tomatoes or it goes gross

Heat a bit of oil or vegan butter in a pan, add 1 tbsp cumin seeds, a finely chopped chilli, a finely chopped onion, 1 tsp turmeric (add curry powder / garam masala / chilli to taste) until the spices are nicely fried off and the onion is translucent, then mix into the reheated mash and serve with roti for the perfect carb fest.

I usually freeze left over mash and use it for some kind of pie topping. Bubble and squeak is an excellent idea.
