Vegan wellington no mushrooms?

3 of us will be vegan at Christmas this year which my mum is hosting so I want to offer to make a wellington for us (big enough for the omnis to have a little as well) and it needs to be tastier than the turkey - but my brother is allergic to mushrooms, does anyone have a good recipe for a hearty, comforting, Christmassy wellingtons without them? I know I can just leave them out but I love the texture and umami they bring

Chestnuts? I usually do them with mushrooms but I'm sure they'd work just as well with carrot and shallots. A bit of soy sauce or marmite will bring the umami

I put all sorts in mine and have even been known to put mushrooms in my end as my girls don't like them. I start with a thin layer of bread crumbs which absorb moisture. Then in no particular order things like roast sweet potato, cooked spinach and onions, chopped nuts. Beetroot, goats cheese, chestnuts. Whatever you like really.
