Stews etc without pulses or grains

Can anyone recommend any tasty recipes for stews, casseroles, curries etc without pulses or grains? I’m keen to eat a much more plant based diet but pulses and most grains seem to trigger IBS symptoms.

I make a potato and spinach curry which is lovely.

Are you okay with beans? Or chickpeas?
Aubergine is a good veg base as are mushrooms.

Nuts are good too, to make up a nutmeat which can go to make nut roasts covered with pastries.

West African Stew sounds amazing!

If you are fine with meat alternatives then I've just made a really oniony sausage casserole with Plant Kitchen sausages and a red wine gravy. We'll have it with mash and veg so quite a traditionally meat type dinner if you are used to it.
It is completely vegan so suits me and satisfies my meat eating family too.
