So I’m trying to eat more plant based and struggling with lunches.
For years I have made batches of cheese sandwiches at the weekend and taken one out each day for lunch. Boring but simple. I did one with hummus this weekend although DP was very sceptical that it would survive the freezer, we’ll see.
Occasionally I now make some quinoa and have a salad with it. I don’t mind doing this once or twice a week but not everyday.
I don’t have access to a microwave at work so can’t take soup in, or reheat anything else.
Any ideas?
