Following as I'd also like some inspiration - that Mexican stew looks good.

Not proper cooking I know, but I'll be making courgetti with pasta sauce and these later.

I've just had Afghan Carrot hotpot with flat bread for my tea, that was really nice and comforting! For lunch I had carrot and coconut soup which was lovely as well

I have a glut of carrots at the moment and although they were the main ingredient in each meal I don't feel like I've had carrots twice!
Vague receipe for the hot pot is to fry onions and garlic and coat in baharat spice and turmeric, add split peas and carrots that are chopped but chunky and cook,

Soup fry onion, garlic and celery add carrots stock and cook, towards the end add half a tin of coconut milk, Blend. So nice when it is hot and with a warm buttered bread roll.

I'm not vegan, not even veggie, but I have a great recipe for black bean vegan stew. Lots of tomatoes, leeks, onions, peppers, veggie stock and couple of tins of black beans. Really slowly cooked, it's lush!

I made this tonight. Left out the potatoes, used kale instead of spinach, added some garlic and extra ginger. DP declared it was "possibly the nicest lentil soup he'd ever had" which I guess is a good review Smile

I made a gorgeous mash yesterday - a whole celariac, a whole parsnip, one large potato, salt, pepper and plant milk/spread. It is delicious. Planning to have it later with roasted veggies.

Sausage mash veg and gravy. ( usually use shroomdogs )
Baked potatoes with different fillings.
Homemade soup with toasties.
Dahl with bombay potatoes.
Veggie stew with dumplings and garlic mash.
Chillie with rice.
Shepherds pie.

I make a really quick and easy lentil chilli, it's lovely and warming on a cold night.

I fry one chopped onion and 2 cloves garlic in a bit of olive oil. Add a tin of green lentils and half a carton of passata, coriander, hot paprika, black pepper and chilli powder and simmer for about 15 mins. Then add a few blocks of frozen spinach and simmer a bit longer.

Mushroom bourgignon - fry mushrooms and shallots for 20 mins or so then add tomato purée and a couple of tablespoons of cornflour, fry for a couple of mins then add red wine, stock, carrots, bay leaf, salt, tablespoon of sugar. Cook till everything’s tender. Serve with mash or polenta.

Thanks all. I think I've perfected my favourite dal recipe and have made two batches in the past few days as I love it so much! I'm having it for dinner with nan and maybe some Bombay potatoes. Carbs anyone? Halloween Blush

I'm not vegan or even veggie but walked past a vegan Thali restaurant today and got sucked in by the smell for lunch. Dhal, rice, a potato curry and a spinach curry and some kind of fried onion thing on top. Indian food gets my vote. I don't have any recipes though!

Jamie's vegan shepherd's pie goes down a treat with the kids and the meat eating husband! Don't leave out the subdried toms though.

Either Linda Mac pies or the new Plant kitchen mushroom pies from M&S (really nice!- £2 each) with a big pile of creamy mash and lots of boiled veg. I serve it with red bisto gravy with a spoon of marmite mixed in. Maybe some fried garlic mushrooms on the side if we are especially hungry. Great thread!

I make a variety of veg\vegan dishes; soups, shepherds pies etc. by firstly steaming the root veg. (after scrubbing but NOT peeling) it keeps the vitamins apparently. I use the water as a stock with some yeast flakes. I peel and chop them before adding to the onions ,garlic and herbs that I've gently fried in olive oil in a heavy saucepan.

Tonight I'm making a creamy mushroom, garlic and thyme pasta using oatly creme fraiche and a little violife soft cheese. It's so tasty, creamy and satisfying.

I dry fry mushrooms and garlic and fresh thyme. Once mushrooms are cooked I add a few tablespoons of the oatly and a tablespoon of violife, gently heat until they have melted then ad a few tablespoons of the pasta water. Drain and add cooked wholewheat pasta. Too with a grating of violife hard cheese and black pepper.

Lentil chili
If you want to make it really quickly just use a tin of green lentils, an onion and a tin of kidney beans in chili sauce.

I make a vegan mac n' 'cheese' . Using white beans; you gently fry some garlic and onions in olive oil add a veg stock\ yeast flakes, and beans then blend them to make the cheese sauce. Which you add to the slightly undercooked pasta. Make a topping with breadcrumbs and or oats mixed with yeast flakes and olive oil . Use vegan cheese if you like it too. ( I can't stomach coconut and it seems to be in all the vegan cheeses) Grin. Then give it 20 mins at 170C.

@ppeatfruit that sounds lovely! I'm baychcooking a big veggie chilli today for warming work lunches next week. Onions, peppers, tomatoes, carrots, mushrooms, kidney beans, butter beans and lots of chilli 😍
