I've been out for a lovely vegan lunch today and whilst I'm not intending to become a vegan, I can see lots of reasons to eat more vegan dishes.
However, after a meat/dairy free meal I often feel hungry with dishes based around lightly cooked veg. Who can recommend a good cookbook for everyday that includes substantial meals and filling lunches? E. G the dish I had today was a bombay potato salad with chickpeas and green beans. And delicious. Other than that, a veg chilli is the extent of my ideas for a satisfying meal.
