Vegan guest staying the night

I have a vegan friend of DH's staying the night over the weekend. He will be joining us for lunch, dinner and then breakfast the following day.

I will keep lunch and breakfast pretty simple. Perhaps lay out several items and let him choose. But I'd love to make a nice meal for dinner, that we can all enjoy. I'd like to make a good impression as it's someone important to DH.

Anyone got a delicious vegan people pleaser dish, that won't take me more than about 45-60mins to prepare? & a pudding suggestion too would be the icing on the cake!

The Kitchn website has a really nice vegan chili recipe (can't link but if you google it should be easy to find). You can serve with lots of little dishes of extras (Oatly creme fraiche, salsa, avocado, baked brown rice, tortilla etc) to make it feel like a more special meal.

In terms of pudding.... I've been served some really nice torte/cheesecake style things made with dark chocolate and coconut cream. I've never made them so I don't know the recipes but again google may help. (Sorry!). Or vegan brownies are easy to make and you could serve with one of the many vegan ice creams around at the moment.

The other thing that may help you is looking on the website AccidentallyVegan (or something like that) which gives you details of regular products which happen to be made with no animal products. E.g. some ready roll pastries are made without animal fat, meaning you can easily make a fruit pie etc.

Vegetable / lentil bake with thinly sliced sweet potato on top

That’s just a few!!

There are loads of vegan brownies made with dark chocolate which is fine for vegans.

Flapjacks (swap out butter)

Crumble - use vegan spread instead of butter - not quite as good, but can be done!

Everyone serves vegan chilli when you go over. Or chickpea curry/tagine.

I do celeriac steaks - brush thick slices of celeriac with oil, chopped herbs and seasoning, or maybe a Cajun rub. Roast in the oven for 45 mins or until caramelised on the edges and soft throughout. I serve with tenderstem that I steam ad then pan fry with lemon juice, olive oil and whole blanched almonds. You can add another salad/dip etc if you want.

Roast stuffed butternut squash.

Puddings - get a really good vegan vanilla icecream (Booja Booja do a delicious one) and serve with bananas caramelised with vegan butter and brown sugar. So quick but really yum.

At the risk of sounding like a broken record, I always recommend this recipe: www.theguardian.com/lifeandstyle/2018/jun/09/meera-sodha-recipe-tomato-pistachio-saffron-tart-vegan Easy to make, looks great, tastes great, doesn't take long. Looks particularly good with a good mix of colours and shapes of tomato if you can get them. Serve with a salad, including lots of green leaves, for a good colour contrast.

Just make sure the puff pastry is the vegan type.

If you're going down the chilli route, make your own tortillas. They are delicious, easy to make, and will make everyone feel spoiled.

TricklBOO, that's timely - I noticed a packet of aduki beans in the cupboard the other day. That's one of our weekend meals sorted out!

One of the mushrooms we couldn't get - shiitake so he put more of the others in but will make it again with the correct ones in SmileSmileSmileSmile
