If you are vegan what meals do you eat?

So, I am not meaning to sound stupid but this is a genuine question.

We eat quite a bit of meat in our family, pretty much all of evening meals are meat based. I would like to cut down our meat consumption and have more meat free meals. We already eat fish and it's tricky as I am doing low carb so very rarely eat pasta, rice, potato dishes.

I would like some ideas for vegan evening meals for a family of 4, dh, me and dcs 6 and 4.

I chuck stuff into my slow cooker mostly because I’m a lazy cow.
Lentils, Tin of chick peas, all the veg going off in the bottom of the fridge and curry paste or powder.
Rice, poppadoms, Nan bread. Lovely.

Roasted veg, sweet potato wedges,
I love veg samosas, spring rolls, fried rice and peas.

Wrap as a pizza base, roasted veg and tomato topping.. kids can do their own toppings.

Beans on toast.. obviously!

Jacket potato with bolognese kinda thing
Bean and (vegan) sausage stew with dumplings
Hotdogs with salad
....vegan nuggets, chips and beans
