Two litres of Koko to use up today

Hello

I’ve got two litres of Koko to make into something today before it goes past it’s use by date.

I was thinking maybe rice pudding with rose water and cardamom, as I’ve got ground almonds to use up too. But I made a cake with cashew frosting and some chia puddings at the weekend that still need eating up, so the rice pudding would just be pudding overload.

Any ideas?

Itll probably still be absolutely fine for ages if it is

We’ve used it in pancakes successfully, although we did use eggs. Plenty vegan pancake recepies though?

Branleuse it’s not UHt it’s the chilled unsweetened one.

I don’t think the cake will freeze successfully unfortunately, it’s got a raw cashew frosting made with manuka honey and that’d kill the enzymes. DH really wanted it for his birthday and the icing cost me about a tenner to make between raw cashews and manuka honey. Doubt he’ll want to freeze it.

I don’t think rice pudding would freeze well? Texture would just disintegrate wouldn’t it.

Pancakes is a good idea, but I’ve never really found a vegan, gf pancake recipe that works well. Don’t like the taste of flax eggs. Plus the attraction of rice pudding was the labour unintensity of it. I do have chia seeds in, can I make a chia egg rather than a flax one?

I know it’s a pain, being both vegan and gluten free! We can’t help it. Does make life complicated though.

I have coconut condensed milk. I would normally make caramel or fudge, but I’ve already made both.
