Best vegan cake recipes pleaseeee!

Hi everyone, I've been asked to do an engagement cake for a vegan couple next month. I can bake a mean cake but I've never made a vegan one before and really want to impress them! Thanks in advance

Carrot cake;
1 cup flour
1 cup molasses sugar
1/2 cup plant based milk
1/2 cup olive oil
1 carrot grated
Handful raisins
1/2 cup butternut squash purée (bake it in chunks and blitz in blender till smooth
1 tsp cinnamon
Orange zest
2 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp apple cider vinegar

Preheat the oven to 190oC
Put vinegar in milk. Set aside
Put all dry ingredients in a bowl
Mix the vinegar milk with the olive oil carrots and purée then add to the dry ingredients. Mix well, put in a baking tin and cook for around half and hour or until a knife in the middle comes out clean.
Sprinkle with icing sugar

Bit late but I only use this recipe now, I change it for biscoff cake/coconut cake etc in stead of chocolate.
