Vegan Christmas cake recipe anyone?

As the title suggests... I'm after a recipe for vegan christmas cake!

I've found a couple but they say they only keep for a week?! I need one I can make way in advance...

Any and all tried and tested recipes are very gratefully received! Thanks in advance. Smile

I'm gonna try this one

2 cups mixed raisins, sultanas, cherries, cranberries, mixed peel soaked in almond liquor for a week.

1 cup flour
1 cup molasses sugar
1/2 cup plant based milk
1/2 cup olive oil
Pistachios
1/2 cup butternut squash purée
1 tsp mixed spice
Orange zest
2 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp apple cider vinegar

I've tried cooking with flaxseed etc as egg replacements but I think purée works better. The vinegar in the plant milk and the baking powder and bicarbonate give it rise.

Not sure about the cooking times yet but I'm going to cook it in a bundt tin then prob decorate with the usual marzipan and icing
