Living with a vegan for a week!

Hi all!

I am going to be living with a vegan for a week and need to do the food shop... I have no idea what to buy!

Can you recommend any easy meals and snacks?

It’s just going to be the two of us so I figured that I might as well eat vegan for the week too, but I don’t know where to start.

Planning on having something available for breakfast and dinner, with packed lunches and snacks.

As budget friendly as possible! Grin

They have vegan and vegetarian recipes complete with shopping lists. It might give you a start point.

www.vegweb.com/recipes also has a lot of vegan recipes and some meal plans.

They may help as a start point.

Breakfasts:
Toast & peanut butter / marmite / jam
(Vitalite is a good butter replacement)
Bagel & avocado
Porridge made with Koko milk
Fresh fruit & soy yoghurt

Packed lunches:
Hummus & salad sandwiches
Tomato pasta salad
Linda McCartney sausage rolls
Boiled potatoes and vegannaise
Fake cheese and pickle sandwiches
Veg sticks and hummus
Samosas
Spring rolls

Dinners:
Linda McCartney sausage, mash & peas
Vegetable tagine & couscous
Spaghetti with soy bolognaise
Baked potato / sweet potato with bean chilli and guacamole (check for milk if buying ready made)
Portobello mushroom burger, chips & salad
Veg & tofu stir fry with noodles and cashew nuts
Thai green curry & rice
Pasta with vegan pesto (free-from aisle), courgette and green beans
Nut roast (you can get just add water ones) with all the trimmings
Veg curry & rice (try saag aloo / aloo gobi / okra masala / chickpea curry)

Breakfasts toast/crumpets with vegan spread. Pure is the nicest, violife is easier to find and is ok also beans on toast/hash browns etc

Lunches: pasta/rice salads, cous cous, wraps with hummous and vegan

Snacks: fruits, nuts, Oreos, Texas bbq Pringles Grin, hob nobs.

Dinners: curry, lentil shepherds pie, lentil Bolognese, veg fajitas, stir fry and rice noodles. Veggie sausage and mash, jacket spuds, bean chilli,

Thanks everyone for the ideas! They sound great.

I haven’t met her yet, @SuburbanRhonda, it’s part of a visiting student programme and she is aged 14. She may do some cooking alongside me but I gather that she eats what her parents cook!

Tesco do a vegan mince (Quorn isn’t vegan) which is an easy option for something like chilli or bolognese. Most cheap/basics garlic breads are also vegan (Tesco and Sainsbury’s).

Also the obligatory beanie chilli, can serve as normal chilli or burritos, or nachos with toppings. That works quite well for mixing vegans and non-vegans as everyone can pick their own toppings (salsa, guac, cheese etc)

Pasta with tomato sauce and lots of roast veg.

Actually Tesco have lots in the freezer section if you want some easy options! Things to have with oven chips and peas/baked beans.

Might be worth checking with her if she has a milk preference, e.g. I don’t like coconut or nut mills, and prefer the cheapy soy.

Tesco Value choc chip cereal bars are vegan, as as Oreos, Hobnobs, Mr Kipling Apple & Blackcurrant pies (but not the plain apple ones), Jus Rol pastry and some of their home bake items.

The Happy pear have loads of cheap and quick recipe videos on YouTube that look really tasty. I'm not vegan btw

I’d get pasta, veggie mince or green lentils, sauce, peppers, mushroons- veggie bolognese.

Rice, kidney beans, chilli sauce, peppers, corn- bean chilli with rice

Broccoli, peas, corn, peppers, mushrooms, bean sprouts, bamboo shoots, sweet and sour sauce, rice noodles.

Vegetable/ lentil soup and seeded wholemeal bread.

Tacos with retried beans, peppers, corn, avocado, salsa.

Peanut butter sandwiches.

Cereal/ porridge with plant milk.

Soya/ coconut yoghurt and fruit.

Baked potato with hummus and salad.

Beans on toast.

Mushroom risotto.

Veggie curry with chickpeas veg and balti curry sauce with rice.

Biscuits like bourbons, alpro or Swedish glace ice cream.

I can usually get all the stuff for above in an online shop for £40, probably cheaper if I could go to aldi or Lidl for the veg and if I didn’t buy shop bought sauces.
