Kala namak - egg flavour salt!!!

Am very excited, I just discovered this ingredient and it’s amazing! It’s also called “black Himalayan salt” it’s basically a high-sulphur rock salt.

I just made some chickpea mayo (chickpeas, onion powder, garlic powder, nutritional yeast, and this kala namak, pulsed in magimix and mixed in some vegan mayo) and OMG it tastes so brilliantly eggy! I used to love egg mayo sandwiches. Freely admit this didn’t make it into a sandwich. I just ate the whole bowlful Grin. It’d be even better with some chives or spring onions and other things chopped in.

I used it in a ‘nomlette’ too which worked very well.

Anyway, just wanted to share, this will now be a staple of my spice cupboard I think!

I personally prefer chana masala over black salt. The taste is more balanced I think.

In case I didn’t make it clear, I meant I’m excited about using kala namak as an specifically eggy flavouring for vegan foods. For us vegans who miss an eggy taste from time to time. So a balanced flavour of a spice mix isn’t what I was going for in this instance Smile but good to know.

But kala namak by itself smells / tastes disgusting? Most Indians I know use it as a constipation treatment. Chana masala and chaat masala (with kala namak) is what’s used to flavour food.

Yes it is used in Ayurveda for intestinal issues. I don’t think it’s disgusting by itself - not in the league of a whiff of asafoetida for me anyway, and I’m not suggesting eating it by the spoonful! A teensy bit (say 1/4tsp in a recipe for 1-2 ppl) can give a proper eggy flavour which can be hard to replicate in vegan dishes otherwise, or at least I’ve found making vegan food over the last 2 years.

If you don’t like then it don’t eat it Smile I was just sharing my thoughts with other vegans. I enjoyed my chickpea mayo tasting like egg mayo today. It was far from disgusting!

I personally think it’s more of an open sewer smell / flavour and wouldn’t ever associate it with egg but each to their own!

Continuing the kala namak love, today I made a vegan shakshuka for for brekkie, the addition of the kala namak to the tofu scramble definitely gives it an extra eggy dimension - not an open sewer in sight or smell Hmm! If anyone reading is vegan and missing eggy flavours I’d definitely recommend trying kala namak for yourself and seeing if you like it Smile

I think we're getting that DuchyDuke doesn't like black salt 😁. Personally I love it in scrambled tofu with a bit of mayo and black pepper. Delish!
