Am very excited, I just discovered this ingredient and it’s amazing! It’s also called “black Himalayan salt” it’s basically a high-sulphur rock salt.
I just made some chickpea mayo (chickpeas, onion powder, garlic powder, nutritional yeast, and this kala namak, pulsed in magimix and mixed in some vegan mayo) and OMG it tastes so brilliantly eggy! I used to love egg mayo sandwiches. Freely admit this didn’t make it into a sandwich. I just ate the whole bowlful
. It’d be even better with some chives or spring onions and other things chopped in.
I used it in a ‘nomlette’ too which worked very well.
Anyway, just wanted to share, this will now be a staple of my spice cupboard I think!
