What are you favourite, healthy, family meals please?

I’m not vegan, but am trying to include some vegan meals in our family meal plan and am looking for inspiration.

I have some vegan cook books, but some of them have some strange ingredients and don’t even sound especially healthy if I’m honest. I don’t want to buy anymore cook books! So I’m asking you lot Smile!

Any ideas much appreciated.

We're not vegan either but eat vegetarian at least 3 times a week and I try to make some of that vegan. At this time of year we will eat vegetable and tofu skewers (peppers, tofu, pineapple and cherry tomatoes brushed with hoisin and roasted in oven) with rice salad, vegan stir fry, jacket potatoes with ratatouille and corn on the cob, vegan curries. This is one of my favourite recipes too which can be vegan

I’m not vegan, but I find curries are an easy, healthy and tasty vegan dish. Chickpeas or lentils are your friend!

I often do Asian style rice bowls. Thai sticky rice with crispy fried tofu, tenderstem broccoli, shiitake mushrooms, sliced avocado, chopped spring onions. Drizzled with a soy sauce based sauce.

I love curries but dc won’t touch with a barge pole. I could do her a sandwich though and make curries for dh and me.

Oh jacket potatoes! I’d forgotten about those. Could do with hummus or ratatouille. That cottage pie recipe looks nice too.

Also a vegetable risotto with squash/beans/spinach and/or mushrooms etc is easily veganised.

Oh I’ve done a few of the Deliciously Ella recipes actually and liked them. There was a lovely bowl thing with roast chickpeas, sweet potato mash and wilted spinach. I might make that again actually as it was delicious. Dd won’t like it (she’s 3 btw and rather picky), but there’s no chilli in it so she can’t accuse me of giving her spicy food Shock. Haven’t tried that turmeric quinoa one, but it looks lovely.

I love risotto, but can rarely be arsed with all the stirring! Maybe one for the weekend when dh can watch dcs. Or maybe I could do one of the al forno versions, but my last attempt was a bit blah. Claggy and bland.

Try bbc good food oven baked risotto. Obviously without bacon!

We are not vegan but I regularly make a Moroccan Veggie Casserole with courgette, aubergine, lentils (red) and chick peas. You can use a spice mix or make your own paste, veggie stock, some tomato puree and Tahin (sesame paste). Serve with cous cous, rice or just bread.

An other favourite is a Thai mushroom broccoli stir fry (agin, make your own paste).
Simply chop the veg & large onion, fry Thai paste in some oil add the veg and some coconut milk...
Serve with rice (or noodles for vegetarian option).

PS: you can make your own Thai Curry / Moroccan paste and freeze in ice cube tray to have quick and easy vegan seasonings.

When I make a batch of hummus we love hummus pasta with sun dried tomatoes.

A really healthy tea is a home made Caesar salad or vegetable stew with wholewheat dumplings.

Oh I’d never thought of hummus with pasta! Makes sense as it’s a bit like tuna mayo or cheese.

If you want risotto that doesn't need so much stirring, use pearl barley instead of arborio rice. Only needs an occasional stir and will otherwise sit and simmer happily to itself.
