Easter meal for family

We haven't had an Easter with my family for ages as we've been living overseas. Now I have my meat eating parents and brother coming here for Easter. I like to cook and think i do so reasonably well but they are very anti vegan.

I'm expecting an amount of grief, but what should I cook? I need to do 2 dinners and at least one fancy lunch. And the buggers don't like spicy food so I can't default to curry.

They are quite traditional, so we'd be having lamb and new potatoes etc if they were cooking.

People are going to think I am obsessed because I keep recommending this on here but Nigella's golden root vegetable & chickpea stew with cous cous is good. Can pm recipe. Festive but not too "out there". If your family really need to eat meat with it, a chicken could be roasted for them separately?

Likewise: ratatouille for everyone and salmon steak or lamb chops for your family?

Butternut squash and red pepper soup? Home made rolls?
