Recently “converted” and missing my regular home-baked cakes. Can anyone share their favourite vegan cake recipes, especially those which won’t bankrupt me with hundreds of medjool dates and gallons of maple syrup.
Or alternatively recommend an egg replacer that would work with my regular recipes.

Thank you for that... I’ll have a look.
No one got any favourite foolproof recipes they’re willing to share? I just want some “normal” vegan cakes to add to my repertoire.

I've got the book recommended by @Mysteriouscurle and it's amazing! I am no baker, but her recipes are delicious and really easy to follow.
I use Follow Your Heart egg replacement powder and it works really well, although I've only used it in specific vegan recipes, rather than using it to replace real eggs in "normal" recipes. It's fairly expensive, but it lasts a long time.

Good luck!

I’ve ordered a copy of the book - any favourites glitter? And thanks for the heads up re. Follow your Heart

These are 2 that I make for friends and family. Hardly notice the difference

This raspberry chocolate cake is amazing. I have made it a few times.

I a not vegan and do a lot of baking using traditional ingredients and admit that I was blown away by how good this cake is.

SpeckleDust · 21/01/2018 17:05

I made this vegan chocolate cake recently for a get-together where the were a few vegetarians and one vegan.

As a non-vegan, I thought it was pretty good (but I wasn’t as keen on the very sweet icing). I think if I hadn’t told everyone it was vegan, they would never have known otherwise.

I used this recipe to make a birthday cake yesterday, it turned out lovely. Used maple syrup instead of golden syrup.

I used Biscoff spread in between the layers, chocolate icing and a grated Oreo on top! I don’t think it’s going to last very long Grin

Used this icing:

This is lovely - normally add blueberries or raspberries to it.

Nigellas vegan chocolate cake. I adore it. I’m not a vegan but it’s my go-to chocolate cake because it is so reliable, and stores well for ages. It’s gooey and just gorgeous.

LoniceraJaponica I made this yesterday for my brothers girlfriend for her birthday and it was a huge hit! Possibly one of the best cakes I ever made! Thank you heaps :) (added bonus was that my nephew didn't like it because it was "too chocolaty" so I got his slice too)

MancMum01 · 24/01/2018 09:03

Nigella's other vegan cake is lush as well from the last series - very light lemon sponge covered in coconut yoghurt and fruit - really nice - recipe on BBC website as well

Another vote for the Ms Cupcake recipes. I've baked batches of cakes from their recipes, and nobody has ever noticed that the cakes are vegan!
Just as a tip, I find them a little too sugary now, so make with 50-100g less sugar than the recipe calls for. Again, nobody has noticed. Smile

Egg free chocolate chip banana bread from all recipes should work with a vegan fat option although I haven't tried. It uses bananas instead of eggs and works well.

3 ripe medium bananas (I use the ones that are too dark for DD and DH)
115g caster sugar
60g melted "butter"

180g sr flour (Or up to 40g cocoa rest flour for double chocolate)
Half tsp baking powder
I add 1/4 tsp bicarb if using cocoa.

Choc chips, nuts or similar - up to 100g

Bake at 170 (fan) for about 35 minutes or until centre not wet...

Needs a loaf tin liner as sticks even with careful greasing.

This isn't a cake, but I always use this for my go to chocolate hit!
Vegan dark chocolate
cacao powder
coconut oil

Melt above in a bowl over hot water

I then add maca powder, spirulina, baboa fruit - different super food powders to taste.

Corse or flaked sea salt and if needed agave syrup again to taste.

Add - nuts, seeds, berries (goji & cranberries are nice combo) - I add loads so it's really nutty and fruity.
I also toast things like sesame seeds and flaked almonds to bring out the flavour.

Then cling film a baking tray. Spread to whatever thickness you want, I do about 2 cm and leave to set in the fridge.

Then break up into pieces.

This would keep for weeks in the fridge - but is always eaten. Everyone who's tried it loves it, people are even trying to buy it off me.
It's so easy and simple to make and really is healthy chocolate!!
The coconut oil gives it the creamy taste I think?

@Inchyragirl sorry- didn't see your message before! My favourite of her recipes is the chocolate chip cookies. They are mega delicious!
