What would you feed this group of omnis?

I'm going on holiday with my family in a fortnight, and two nights I'll be cooking for us all. There will be six of us: vegan me, veggie (but used to me cooking vegan nightly) DH, and 4 omnis.

Of those four, my mum eats everything, my sister is really healthy and mainly eats low-carb chicken-based meals, and my dad and BIL both like meat with a side of more meat... My dad in particular is suspicious of many vegetables and anything which looks trendy.

In an ideal world, I'd cook something that's easy and not ostentatiously vegan/hippyish but nonetheless is super delicious and hearty and everybody enjoys!

Any ideas very gratefully received!

Could you get away with hotdogs on one night, veggie or meat, rolls, onions, some sort of vegan slaw, corn on the cob, sweet potato wedges?

Chilli non carne with rice, tortillas, avocado and sour cream/cheese for those that eat it.

A range of curries, with extra bits like rice, samosas etc

I'd prob do something like a lentil shepherds pie, or a selection of meats and cheeses (for those that want them) with some hearty roast veg and bean salads.
Or perhaps a chickpea curry?

I think a selection of dishes where folk can build their own main is prob the best to please everyone

I defy the staunchest meat eater to not enjoy Jamie Oliver's vegan shepherd's pie. I don't bother with the herby topping though.

There is a lovely vegan alfredo recipe on minimalist baker which went down well with family members. Also what about a biryani? Or as I am cooking tonight, patatas bravas with a vegan aioli (plenty of recipes about for aioli options I recommend minimalist baker again for this.)

I always cook for the most "restricted" diet- so in this case, I'd cook vegan ( I second the Jamie Shepherd's pie) but then go overboard a bit on the puddings. That always shuts up any whinging from meat eaters.

Veggie lasagna made with aubergines. My DH loves this and he's a massive meat eater.

Quorn shepherds pie.

Mushroom curry, with lots of dips and sides.

The problem with lasagne is that all the vegan cheese substitutes taste horrible (IMO, but I am massive cheese lover).

I won't be using any fake meat/dairy products as I've found in the past non-veggie/vegans are too suspicious, but so many good ideas here. Will be testing out Jamie's shepherd pie to see if it's a goer and have many options to dither over too!
