Hi,
I have been vegan since about February.
Doing ok, but could do with more variety, it's hard when cooking for the rest of the family who eat a more 'traditional' diet.

I am eating too much sugar and carbs!
Any suggestions for breakfasts that are quick, or prepare in advance, filling and ideally sugar free or low sugar?

Thanks!

Porridge made with soya or almond milk, berries and chopped nuts on top.
Corn cakes with banana and peanut butter.
Scrambled tofu with mushrooms and spinach.

I've been vegan for four years.

On a weekday morning I tend to either make a protein loaf over the weekend
holycowvegan.net/high-protein-whole-wheat-sandwich-bread/ - 17g of carbs and 9g of protein per slice and about 90 calories.
Or I buy a protein loaf that is vegan but can be quite costly - Hovis have started doing a low carb loaf that is Vegan too!

Or I like having a bowl of soy yoghurt, Alpro Go on is my favourite, but Provamel do a sugar free yoghurt. Could blend a small amount of fruit to make it 'flavoured' or just mixed with berries, fruit etc.

Or if you want seriously low carb I cook a pack of vegan sausages and have those with some low sugar ketchup. Again, really high in protein.

On a normal day though if I'm not too 'health concious' I like a low sugar granola (Lizzie's do a really nice one), or I have some of DH's low sugar protein cereal or just cornflakes, cheerios, porridge etc.

I make a sugar free healthy smoothie and do enough for 2 days. It has seasonal fruit with ground almonds and linseeds in it also a whole organic lemon (there is a load of vit. C in the pith and peel, I grate it after putting the juice in ). Sometimes I put my own (made with apple juice) plum jam in it , if the fruit isn't sweet enough and or half of proper fruit juice and water . It's scrummy!
